Cooked these around 300*  (used apple wood) and sauced them just before they reached temp and then they got baptized with fire on the mini's grill with some home made lump charcoal. 

The sauce is not like anything i've had here in the States. It's a very complex flavor, not super sweet and has a little bite but it doesn't stay with you.  The more you eat the more you want....could be dangerous!
