I was going to grill a couple of steaks for dinner and the more I thought, I said, "why not"? I have been wanting to try a RS, so this was a good time. Wife got 2 nice 16 oz. NY Strips and I put them on the smoker at 250* and they were at 130*IT in about 1-1/4 hours. I took them off and seared on my FB grate for 2 min. each side. I also had corn on the cob, tossed salad and I braised some onions and mushrooms at the same time as the steaks in some EVOO, Worcestershire, butter and a little Montreal.

I did the steaks with EVOO, SPOG and a little Montreal. Wife and I like our steaks a little over Med. Rare, but the 130* was a little much. I think I'll take them off at 125* next time. Also, for our taste, the Montreal was a little much. Just the SPOG next time. At the end of the day, the steaks were still very good for the first time and there were no disappointments at the dinner table.

Sorry, no pics. I really didn't have an idea they would be so good, so I didn't think about pics.

Glad to hear that they turned out great. Can't wait to see what you do next time.

Thanks bmudd. You can believe that there will definitely be pics on my next cook post. The alternative heat is too much. There are some really great folks here that have been a tremendous help to me and this is a great forum. I wish I had found it years ago. I stumbled through my smoking education by eating way too many mistakes.

I appreciate all of the support of the friends that I have made here over the last 8 months. Thanks everyone, Joe.
