Reverse flow smoker using charcoal

    I have a work functiom next week i will be cooking a god bit of hot dogs and ham burgers. I am planning on uaing a 250 gal RF smoker i built. Everything is 1/4" on smoker. I have alwaya used wood on my smoker but would rather not use smoke on the burgers and dogs. Would putting a layer of hot coals on the RF plate damage it? The welds are very strong but i would like others input on this or if anyone has any experience. Thanks

    I would think the short amount of time it would take to cook a burger or hotdog. They would not get that smokey.
    You also could put charcoal on a grate in the bottom of your cooking area and cook them that way.

    I wouldn't think it would damage 1/4" steel.

    I would think it would be fine.The only thing is you might need to re-season the plate after you cook.And how close will your coals be to your burgers,could be a flare up problem.I believe I'd fire the old girl up with oak and get my temps up around 400/450 and keep a good size bed of coals.You might just cook the best burgers  and dog ever.good luck.
  5. i have a lang smoker ( a stick burner) that i have put a charcoal in it does not hurt it at all.
