A friend of mine retired this week after 20 years of service in the Marine Corps and asked me to BBQ. How could I say no?! So myself and the other enlisted Marines of our detachment are giving him a proper send off. Got a boston butt on now and 3 racks of spares later.

looking good at the 3.5 mark. What temps are you cooking at? How many pounds is that butt?  I'm about 8 hours in on my 5 lb shoulder smoke. The shoulder is sitting at an IT of 172... About 30 more to go...

250-275. I just put on 3 racks of spares and had to do some rearranging, and I lost all my heat. Trying to recover now.

Foiled the butt at 6 hours and stuck in the oven to make room on the smoker. About to wrap the ribs, then unwrap everything for the final hour to get crispy again.
