I just wanted to report back after sun. I smoked a almost 17lb. turkey I cut it up I used the same spicy apple rub I used on my spachcock chickens a couple of weeks ago somebody told me on this site to put Mayonnaise on the turkey & chickens before I put the rub on & the skin come out great & crispy I have a Mes-40 the chickens took only about 2hrs. to smoke the turkey took about 3 & a half hrs. temp was on both 250 with turkey turned down on last hour so it would take a little longer to cook can't show pics because have not a new camera after wife dropped & broke it----------Ken

do you have a cell phone with a camera? thats all i use to take my pics with - and i would really like your recipe for your apple rub - gonna do some ribs this weekend and would like to use an apple rub on it - think it would go great with the apple butter sauce i have planned
 
Sounds good, so the mayo made a difference? I'll have to keep that in mind and I'm going to try your apple rub too. 
 

I'm curious though...your MES 40 goes up to 350? Mine only goes to 275 or am I missing something?

yes my mes-40 goes to 275-- I meant to say I set the temp. at 250 not 350---last year when I bought mine I got it at Sams club

they have the best deal if you know somebody looking for one I paid $ 299.88

the only difference is the front door with window is chrome & rest is black----Ken

Terry--apple-brine--1-gal.-water--I cut the apple juice down to 2qts. instead of a gal. I used  the apple & cranberry juice --1--cup-sugar, 1/2 pound of jalapenos Sliced, 2--TBS--Crushed red peppers

put Mayonnaise on the skin of chicken or turkey before you put on rub the skin come out great &  crispy

Apple---Rub---6--Tbsp--Ground dries apples, 3--Tbsp--Brown Sugar,  3--Tbsp--white--sugar,  3--Tbsp--Kosher Salt,  1-Tsp.--Paprika, 1--Tsp.---Garlic powder, 1--Tbs.--Ground Black Pepper-----Optional---1Tbs.--Cayenne Pepper

to make Dried ground Apples----take 3 or 4 Apples SLICE VERY thin spray or butter cookie sheet place the thin sliced apples on cookie sheet & salt apple slices & add brown sugar put in oven at 150 for 3hrs. they will not become crunchy in oven  when it appears they are drying take out & them rest over night when very crunchy they are ready to grind up.------I use a old coffee grinder--------Another way to dry apple slices i

Gosh I thought I had missed something on mine!!!!! Yep I got mine at Sam's in Colorado Springs and pd about the same price. Mine has the glass window, which is not mandatory for me, but I do love the remote! Thinking of buying another one.

thanks for the recipe - we're lucky to have a store here called the bulk barn - they sell a variety of spices and such in bulk including a plethora of dried fruits and veggies - no need to go thru the hassel of drying my own apples haha

Right-- one masterbuilt-40  not enough you need 2 are you opening up your own store  it easy to clean that front window I just use a scrubby some

dish soap & it cleans right up & a paper towel to wipe clean.

When I got my Mes-40 last year I  called masterbuilt on there 800 number & told them I thought the

wood chip tray seemed to be a little small they sent me a bigger one free of charge & the only took

  me about less then 6 min. to install------------Later-------Ken
 
No not opening my own store but it seems I always have jerky, snack sticks or summer sausage on there and I want to smoke something else. I swear I smoke something every day of the week except weekends! That's when the significant other is home and I gotta spend time with him! I never upgraded the chip tray...wonder if it's too late?

I would call there 800-number----it is 1-800-489-1581 & give them your Model--number & Serial-Number

& see what they say-----what you want is the bigger wood chip tray i think they call it wood chip retro kit
