Reheating Short Ribs

Okay... so I smoked some amazing ribs yesterday that took an insanely long time (about 14 hours at 230 because they weren't completely thawed in the middle -- DON'T FLAME ME FOR THIS...haha... they were leftovers from Superbowl). They didn't finish up until about 2am (instead of the anticipated 6:30pm...whoops!).

When they did finish up (at around 195 degrees) I "sampled" one... all alone in the kitchen after everyone else had gone to sleep, it felt a bit like food-porn! It was delicious. Fell off the bone, spoon-tender. Had to stop myself at one so the fam could enjoy tonight.

So we are planning to enjoy these monsters tonight for dinner. They've been in the fridge all night and this morning.

Best practice to reheat? I used a simple SPOG rub so there's really no liquid.

Thoughts? Let me restate... HELPFUL thoughts?  hehe.

I have had the best results reheating beef ribs in the microwave very slowly. I usually reheat them at 50 percent power until they are hot enough to be luscious but not hot enough to dry out. It really helps if they are in a container wrapped in plastic with a small slit in the top. If they are Vaccuum packes you can reheat in simmering water in a pot. Also, adding some liquid to a pan, probably beef broth In the case of beef ribs and poppin it in a 250-300 oven covered right in foil would work too. Hope this doesn't confuse you haha
 
Vacuum sealing (or a ziploc if you can get the air out) in simmering water seems to work well for everything. I like to start with cold water, bring it just to a boil, then turn it off and let it sit for 15-20 minutes.
