I smoked two 9lb butts and dang if i didn't run out of time. Neither made it to the magic 200 degree number, so we ate one as pork sandwiches (still delicious) and I froze the other.

Is it possible to reheat the frozen butt to where it's then "pullable"? I'd of course wrap it in foil and add some liguid for the braising. Or is it too late and all that heat would just dry it out?

Thanks.

I've never tried to reheat/finish cooking a whole butt... I'd think if you foiled it with some apple juice or your favorite mop, you might have a chance at it. Try it and see how it goes... I am curious to hear the results.

Good luck!

Hawg, I'll give it a try. A week from Wednesday where I'll thaw it for my office Christmas party (go figure). Probably at a low temp of 250 should work. Guessing 2-4 hours? I'll track the progress and let you all know how it goes. Who knows, we could be on to something.

How close did you get to 200°?

I had a couple of butts a few weeks ago that plateaued for a loooong time and I had to pull them and put them in the fridge. The next day I put them in a 250° oven (wrapped in foil) to finish them. They came out just fine, but you are starting all over temperature-wise. I put them in the oven because I figured they had had enough smoke (about 15 hours worth) and just needed to finish cooking.

Hope this helps.

Home Brew...that's great news. I got them to about 191. They plateaued for about an hour at 165 and then started moving. But it just got too late. How long did you have it in the oven at 250?

I don't remember for sure, but I believe it was at least 8 hours. But they went in cold... almost straight from the fridge. Sorry I don't have something more specific for you.

BUMP. I have a related question about re-heating two butts I am going to do for a company potluck on Friday. Will they re-heat from the fridge okay in a roaster with the small heat units under it? I think it will be like a crockpot with the lide but want to be sure.

I like the crockpot idea. Now the next question, would you put some type of liquid in there? Applejuice and some Meyer's Rum? Or just cold. I needs to get to that magic 200 and just wondering if the crock pot will get it there.
