I already posted a plea for help on smoking a country ham, and now I'm coming to post here -- guess I did it backwards! (And thanks to the folks who posted responses ... I definitely feel and appreciate the online support for our upcoming smoking adventure.)
My husband and I bought a Treager "Li'l Tex Elite" (http://www.traegergrills.com/shop/grills/BBQ07E), and we've already smoked two chickens, a turkey breast and a pork loin. Nothing fancy; just following some simple recipes. But this weekend we'll be smoking an 18-pound country ham, and we're more than a little nervous about it.
We're new to smoking, but love the flavors of smoked foods we've eaten, and we're looking forward to learning so much from this forum!
