re-smoke/cook sausage

    I missed adding a seasoning to my summer sausage, it is very bland, can i take it out of the casing, regrind, add the seasoning and restuff?  if i do that do i have to resmoke/cook it to bind it?

    If it's already been tempered/cooked, it's a done deal...the proteins have bound-up and if your grind it again you'll end up with crumbs that won't flow through a tube. Come to think of it, once it's stuffed and cured, that pretty much sets it up tight enough that you'd have a difficult time working it again.

    Chunk it up and add it to some soup or something

    An idea would be to add it to something were you could add extra spice to help compensate.
