First off, apologies for NO Q-View. I didn't even think about it since I grill so much.

Anyway, I made up "Remy's" Ratatouille (from the movie) using a Pampered chef round clay baking dish. Pureed fresh tomatoes, added sliced garlic, chopped onions, a bit of olive oil and then using my mandolin I thin slice the eggplant, yellow squash, zuchinni, and red peppers. This were layered concentrically to form a nice spiral. This was topped with a bit more olive oil, salt and pepper, and fresh thyme. The dish was covered with parchment paper prior to baking in the grill.

The scampi were done using one of my cast iron skillets over the IR searing burner. A mixture of olive oil and butter provided the lubricant for the garlic and shallots. The shrimp were added and seasoned with fine sea salt and cracked black pepper. A bit of white wine and lemon juice finished the dish off. Garnish was fresh chopped parsley.

I kept the grill around 350 to bake the ratatouille. Baking time was about 45 minutes. It was nice to not heat up the kitchen.
