After seeing Raptor's thread about the pot pie I had to make some. It looked so good. I had 3 leftover leg quarters I saved from a previous smoke just for this.
Went out and got a few things I thought would be good in it and found a few more in the pantry. Potatoes, carrots. onion, corn, green beans and baby peas. Some Cream of Chicken soup and of course some smoked chicken.
Sauteed the onions and carrots then added the other ingredients except the taters. Added 2 cups of water.
Let it simmer about 30 minutes then added the taters for about 10 more minutes.
Get my pans ready.
Pour it into the pans.
Get my pastry out and cut in half. Keep in mind that I really suck at pastry.
Covered each one. Told ya I sucked at pastry. I think it was to dry. I'll let my daughter make it next time.
And into a 375 degree oven they go. And 25 minutes later out they come.
