I have never smoked one but have cooked them on the grill with indirect heat . They can be gressy but very good...If you parboil it first that might be a good idea if your going to smoke it....
,stop in at ROLL CALL and introduce yourself, please include the area you are and what you intend to use to cook your Raccoon so we can give you a better answer, IMHO though,if you boil it for an hour , smoking would be redundant.
I have made a stew of them and discarded the fat that I didn't get while cleaning , then add Veggies (S/P) and dumplings, not bad,but ....
Ok where is the rollcall... I am a retired chef and restaurateur for 30 years, live in East Texas past ten years, originally from Quebec Canada. I have lived in quite a few Southern States after spending two years in Northern Canada with Canadian Navy in Churchill Manitoba. Still doing smoking and cooking for friends and family, Our cooking team have done some funds raisers and charitable cookouts.
