Qviews of 2 racks of St. Louis ribs, one wrapped one not!

  1. St. Louis prep, then yank off the membrane:

    Memphis dry rub made with the usual suspects:

    3 hrs @215 in Masterbuilt Pro with mix of apple and pecan wood soaked for 30 min in hot water (hot because it was below freezing this weekend in Boston)

    After 3 hrs they got sprayed with half apple cider, half Captian Morgan rum. One got wrapped, the other did not.

    2 hours and unwrapped the one, sprayed down with the mix (drank the rest of the mix...highly recommended). One more hour and the one that was never wrapped passed the 45deg bend check. Done.
    Good smoke penetration, nice flavor. Gotta say, I liked the ones I wrapped for 2 (a true 3-2-1) better than the non-wrapped ones. No sauce required/desired and they didn't last long, so I'm happy with the smoke! Always looking for ways to improve or comments. Too much fun!

    Why do you soak your wood?

    I like my ribs not foiled.

  3. Hi c farmer-I read that soaked wood creates more smoke. No clue if that's true or not. It certainly is an extra step that I would like to avoid if it's not helping me.

    I wanted to like the unwrapped ones better because I feel like it is more common with people that know their stuff when it comes to the smoke game. I like running experiments like I did with side by side comparisons with minimal variables to get a good idea of the impact the tweek is having.

    Water soaked wood has to dry out before starting to smoke. What you see at first until the wood dries out is steam.

    Don't be ashamed of liking the wrapped one. Everyone has different taste. We prefer ribs that are not fall off the bone but many friends like fall off. Regardless, your ribs look great! Just keep making them the way you like them.

    Nice Ribs. Nice smoke penetration. Should have made some smiles!

    Its hard to beat the 3 2 1 method, I didn't want to like it either, but it was just more tender and juicy.
