Quick Wings question

So I am going to smoke some wings for the first time next week.  I have done plenty of chicken halves, whole chickens, etc.  My question with wings is, do you smoke them in a foil pan with a butter bath like you would do for competition legs?  I was thinking of soaking them in melted butter overnight and then smoking at a high temp to get crispier skin but wasn't sure about the butter bath in a foil pan or if i should just go directly on the grates.  I am smoking on a 22.5 WSM.  Thanks!

I've never used a butter bath myself, but maybe someone who has will chime in.  I just lay them right on the grates.  About the final 30 minutes or so, I'll crank up the temp in my smoker to 325*-350* to get nice crispy skins.  They always come out great!

Thank you!  I figured most would be putting them on grates so I just wanted to double check.  I get a little into watching BBQ pitmasters and always see the butter baths for legs.

Higher temp smoking or finishing off on a high temp grill will get you crispy skin!

You could do a few of the butter bath wings in small pan just to see how they come out. If you do be sure and let us know how they tasted and don't forget the Q-view! As dirtsailor said-the scarebelly wings are a great as well, never been disappointed with injected wings.

They are great! You can do other injections like teriyaki, Italian dressing, etc. but for the good ol spicy wings Scarbelly wings are the best!

Wow thanks for the recipe beenwanting to try ome wings I seen one SeenRed posted with franks so I picked up two huge botles at Costco lol.Loved the little bunt tips on the wings gonna try some sun I will post Q-View.
