Quick Tenderloin Supper... Shweeeet!

I've still got a freezer plum full of tenderloins so I'm playin with ways to fix em. Tonight I sliced two of them about 2 inches thick. Put them in the vacuum sealer with some allegro for about 45 minutes. Wrapped them in bacon and placed some fresh sage on top with a little more bacon. Sprinkled with lemon pepper and onto the grill. I used my smoke box filled with applewood and cooked these little darlins to 155. Slammed them on a plate with some roasted raspberry chipotle sauce, homemade potato salad and green beans with onions...... shweeeeet!

I traded Red some of the tenderloin for her green beans and potato salad.... but I wouldn't give her any of my roasted raspberry chipotle sauce. We already struck a deal when she realized she had forgotten the sauce. Man..... I can eat that stuff on biscuits like jam.
 
Ok...I admit.... I cheated on the smokin part just a little bit this time. I was hungry and in a hurry. I did fill my smoke box with applewood and if you look closely you'll see that there is smoke coming out so it is officially smoked tenderloin..... but next time I'll plan ahead on this one and slam it in the smoker for a couple of hours.

I'm makin my first pizza on the grill. One veggie and one meat lovers. I've got the applewood smoke goin.... I won't hurt you with pictures of it... but it will have smoke on it!
