I wanted to play with the stick burner today but didn't have a ton of time so spatchcock chicken it is.

About halfway home. My aunt decided to come over so I threw on some thighs too.


Just before I flipped it to really put a crisp on the skin.


Thighs are looking good.


Time to rest.

This was fun. It's windy today so the OKJ ran anywhere between 250 and 320 using hickory splits but most of the time it was hanging out in its ~275 normal area. I'm kind of out of practice spatchcocking but it still turned out nice. It's such an easy thing to do that makes poultry cooks so much easier.

Still short overall. I should have taken the time to fire the grill up to screaming hot instead of just building up the fire in the firebox. It was better than just smoking it but it still didn't get there. The skin on the legs and thighs was bite through. The breast was like 80% of the way there.


Kids had already dug in before I could get regular plated shots.


Happy with the quarters. Now just to work on getting that breast skin all the way crispy.
