Often, smoking is a long complicated process. It doesn't have to be.

We were at the supermarket and they had a pork tenderloin marked down so we got it.

I mixed a tablespoon of olive oil with a teaspoon of cider vinegar and gave the tenderloin a nice oil massage. Then I sprinkled it with herbs de provence.

I put it in the pellet smoker preheated to 200 F with pitmaster blend pellets. I tucked the pointed end under to stop it from overcooking.

I smoked it at 200 F ro 45 minutes. Then I turned the pellet smoker up to 400 F (I like a little crust on my tenderloin). I took it to an internal temperature of 155 F which took a little 25 minutes.

I let it rest for 10 minutes and cut it into medallions.

Here are the finished pictures.

We served it with mixed vegetables and a mashed potato casserole.

The Verdict

This was as delicious as it was easy. I do like a pork tenderloin.

Thanks, Bryce. One of the things I like about pork tenderloin is the nice texture.

Thanks, Kevin. It is the first I did on the pellet smoker. The heat control made it very easy which is important to an old fat Canadian.

I appreciate the point Richie but I am shocked you find something more important than smoking!
