When you guys are doing spare ribs and using the 3-2-1 method, do you wait for the 1/4 inch pull back to foil them or do you go by time? The last rack I did didn't pull back after three hours and never really did. Just curious what some of the more experienced guys do.
 
RJ I wait for the pullback. That 3-2-1 is only a guide anyway. Is the temp. in your smoker in the 230 range? Do you have an accurate thermometer to guage your smoker temp? I wouldn't trust the stock one that comes with the smoker. Hang in there, others will come along shortly to help out.
 
I'll usually shoot for a bit more than a quarter inch, but that depends on smoker temp. Then I'll foil (put em in a foil pan and cover the top with foil) then back on the smoker for 2 hrs or so. The last 2 times I did ribs, I just uncovered the pan and let em rest. Came out perfect. It's not exact and in fact it's quite flexible. Just depends on how well you know your smoker and the techniques that you learn. Soon you'll develop your own style for doing em.
 
I keep temps in the 230-245 range and use an ET-73 to monitor everything. I'm doing some more today, so I'll try and waitfor pull back. Thanks guys.
