quick butt question

ok, i may take some flame on this, but here goes. is it ok to finish the cook in my oven if the temp is ranging from 190-270?
i'm making a butt for my workers soon but don't have to time for the full smoke. i planned on smoking till 140-160, then putting in the oven at 225. but i checked my oven with my probe and found the big temp ranges when set at about 210. at 225 it would top a little over 300. it cycles from high to low in about 10-15 minutes, and low to high in about 3-5 minutes.

No worries, you are always gonna get a temp spike as any oven cycles through its setting. You are goo d to go, and hope your workers enjoy your food!

Finishing the butt in the oven is as controversial as what came first the chicken or the egg but in the end, it is a matter of personal taste and (as is in your case) a matter of convenience.

In my opinion, in the smoker through the entire smoke is perferable but I am confident that sooner or later, time or weather (living in Alaska) will warrant that I will need to finish something in the oven and will probably do so.

The red flag for me is not finishing in the oven but the wide temp range you have in your oven as a consistent temp is deisrable throughout the cooking proccess.

While it may turn out just fine, you will need to keep a close eye on the temp while in the oven.

I sometimes finish in the oven once I foil at 160. Once foiled it really doesn't matter what the heat source is its not like its gonna take on any more smoke.
