Quick Brat Burgers

    So I am still experiminting with sausage making, fresh mostly. I want to really get that down before I move in deeper. So I found some ground pork on clearance.

    Added some Brat Seasoning to it

    Mixed it by hand, then back into the frezzer to firm up before making patties

    Quick sear on direct heat, then moved to the indirect heat with apple chips in a foil pack

    Ready to eat

    Couldn't seem to get the seasoning right despite MANY fry test? They weren't bad but not great? It was 1.22 Lbs & by the end I had added as much as 5 teaspoons of seasoning one by one. O well guess I'll have to keep trying!!!!

    I also have the AcLeggs mixes on hand, and all are for 25lb batches.

    To determine the proper ration of mix to meat, I measure by WEIGHT, not by volume. I weighed the contents of each bag (grams) & divided it by 25 to get an accurate weight measurement in grams of spice per pound of meat. Something like 51g of spice mix per pound of meat (but don't quote me here...this number is off the top of my head). In this way, I know I'm getting a accurate blend of what the manufacturer intended.

    Thanks guys! It was fun making them & lots of room to improve. When I make itialian sausage I use the same measurements so I thought I was on track doing the same with brats? Good enough to eat though

    Thanks Gary, I'm eyeballing your Jalapeno & Mango Chicken Sausage next!! I don't have a grinder though so it might be a little dicey[​IMG]

    Looks good!  So many different sammies here I would like to have for lunch today. 

    Oh yes, do try the Chicken Jalapeno sausage, it's very good, ...if you want it I have a hand crank grinder I'll send you so that you can get started.

    If you can chop up the veggies real small you can buy ground chicken and mix it up that way. Do you have a food processor? If so chop the veggies then toss for a couple of quick turns in the food processor and mix by hand. Make them into patties and enjoy.

    nice looking brat sausage burgers there Terry,,,,nothin' wrong with fresh till ya get all the gear needed. I've been meaning to do it for months, need to get off my lazy a** and do it. Bet those would be killer in a Stuftz press....

    That's why I love this forum! Sometimes things just don't dawn on you until someone else mentions it? Thanks Gary I do have a processor? Man I can't wait! Maybe by then SOB will have that spinach & artichoke chicken sausage posted? Sounds like a busy weekend:)
