I have a 5 lb stuffer and i like making 5lb batches of sausage. I use deer and wild hog for all of my sausages and like to have a 30% fat ratio.

For every 5 lbs of meat i need 1.5 lbs of pork fat to be at 70/30 but that comes out to 6.5 lbs of sausage. What would be the correct amount of meat and fat for 5lbs of sausage?

3.5lbs meat/1.5lbs fat

Make it easy and convert to 10 then divide by 2

70% of 10 = 7 so 7/2 = 3.5
30% of 10 = 3 so 3/2 = 1.5
 
Ok my calculation of 5 lb meat to 1.5 lb fat for 30% ft was not correct.
.30x5=1.5 that would mean that 1.5 lb of my total 5lb would be fat?
