Question on weights?

Discussion in 'Sausage' started by lennyluminum, Sep 7, 2013.

  1. I have a 5 lb stuffer and i like making 5lb batches of sausage. I use deer and wild hog for all of my sausages and like to have a 30% fat ratio.

For every 5 lbs of meat i need 1.5 lbs of pork fat to be at 70/30 but that comes out to 6.5 lbs of sausage. What would be the correct amount of meat and fat for 5lbs of sausage?

If my math is correct, and it may not be, I think 3.75 lbs of meat and 1.1 lbs of fat is about right.

    3.5lbs meat/1.5lbs fat

Make it easy and convert to 10 then divide by 2

    70% of 10 = 7 so 7/2 = 3.5
    30% of 10 = 3 so 3/2 = 1.5

  5. Ok my calculation of 5 lb meat to 1.5 lb fat for 30% ft was not correct.
.30x5=1.5 that would mean that 1.5 lb of my total 5lb would be fat?
