So, the family is coming in and going to do some smoking...

I have a vertical smoker...

I have a:

5lb brisket

1 rack of baby backs

1 rack of spare ribs

I believe the brisket is going to take a little longer than the ribs (using the 3-2-1 method for the ribs)

1.  Should I put the brisket in a pan or just on the rack?

2.  What rack should I place the brisket, baby backs, and spare ribs?

Any help, comments, etc. Would be greatly appreciated!

Thanks,

Jeff

I have a vertical smoker...  What chamber temp are you going to use?  Might I suggest 250F.  It will help speed things up.

I have a:

5lb brisket

1 rack of baby backs

1 rack of spare ribs  Not a problem, just three different times.

I believe the brisket is going to take a little longer than the ribs (using the 3-2-1 method for the ribs)  You are correct, but briskets can be tricky and surprise you.  At 250F I'd smoke the brisket on a rack with a drip pan below it, then when the IT hits 160-170, wrap it in the drippings in the drip pan with a little beef broth.  That 5 lbs brisket could be at the 200F target IT in 6 hours, or 8-9.

The 3-2-1 method will work with the spares but will be too long for the BBs.  At 250F I use a 2.5-1-.5 for BBs.  In either case you want the ribs to fall-off-the bone, which is how non-smokers prefer their ribs.  When you unwrap it look for about 1/2" draw up the bone.  If it isn't there, wrap it up again and put it back on the smoker for another 15 minutes or so.

1.  Should I put the brisket in a pan or just on the rack?

2.  What rack should I place the brisket, baby backs, and spare ribs?  If you have a temp difference between the racks put the brisket on the hottest rack, the BB's and spares on the coolest.

Any help, comments, etc. Would be greatly appreciated!  Others may have different ideas so stay tuned!

Thanks,  You're welcome!
