Question for my first Fatty

I am smoking a Shoulder this weekend and I am gonna tackle my first Fatty (or 2)

and i was wondering:

If i am stuffing w/ meat (Thinking Steak like we use in our Philly Cheese Steaks around here or something else along those lines) should i cook it before I stuff or will it cook insde the Fatty?

Thanks for any advice!
 
Yes, you will first have to cook the meat that's to be stuffed inside, or you won't be pleased with the texture at all.

Philly cheesesteak fattie would be great.
Like said the meat should be cooked, veggies don't have to be but they will still have a crunch to them so you might want to lightly saute them before putting inside, and if you do then be sure to lay them on paper towels to get some of the oil off before rolling.
 
yea I always saute' my veggies until they're translucent, good luck with your first fatty, beware though, it becomes an addiction!
