Question for all you?

  1. Ok I LOVE BRISKET!  but for a family of 4 its a ton of meat.  And it takes forever to smoke.  My smokes are doing about 15-20 hours.

    So if I want to feed just a family of 4 and want to smoke 4-8 hours, get that awesome bark and still get that awesome Texas Brisket taste.  

    Do you have a recommendation?  Maybe a huge Steak or something?

    Go to Franklin's....sorry just kidding.  You should be able to find a small brisket flat in Austin.  It would only take you 6-8 hours depending on the size, and it still has all the flavor of a full packer.

    Brisket flats and points can be had in the 4 pound range. Or, give Chuck a try. Does not slice as easily or pretty but all the flavor and can be had any size you need...JJ

  4. Thanks Jimmy, where have you see 4 pound briskets at?  I will start looking today for some.

    What? You don't like having leftovers?

    In terms of cook times, try raising your temps. I usually cook in the 250-275 range and I have gotten briskets done in 10 1/2hours, depending on how breezy it is out.

    You should get smaller flats at a super market. It will cost a little more by the lb becausr they cut it up.

    Also a good sized beef roast smoked to 140 IT isnt a bad way to go get like a 3-4# london broil should take 3-4 hours.

    Smaller Flats are common in Grocery Stores. Points, my Fav cut off a Brisket, are more common from Mom and Pop or Custom Cut Butcher Shops. Not to mention, buy a Packer and break it down yourself. Not hard at all, been doing it since I was a kid. The Flat and Point are separated by a distinct seam as they are two muscles. The larger Flat can be cut in 2-3 pieces. Vac-Pac or wrap well and freeze...JJ
