I recently tried to make smoked swineapple. It turned out great except for the bacon falling to pieces. Has anyone had this happen before and how do you prevent it. I used Wright's Applewood smoked bacon.
Partially cook the bacon first.... On a rack in the oven at 325 ish.... until it shrinks up about 10-20%... That's with store bought bacon... Then wrap and hold with toothpicks....
