I just got a container of hot italian and bratwurst seasonings from sausage maker. In your exp. using sausage maker seasonings do you add the recommend amount of seasoning or do you find that you need to add extra seasoning to get the flavor you are after.

I've tested a few of their spices now and have found that the recommended amounts are perfect for my tastes. Now having said that, I convert it to the amount for five pound batches.
I always order from them now exclusively. Just did the polish mix, very good flavour.

Just follow the directions, then before you stuff the casings, take a bit, form a patty and do a test fry, test for flavour and carry on if OK, if not re-season the batch and try again.

I'm doing 5lb batches I'm sure it won't go to waste I really like the way it smells so it should taste good too. Just wanted to know if the recommended amount of seasoning was good in you alls experience

Rec amount was fine with me,  I do a lot of 5lb batches, and just make sure you put the rest in Ziploc bag and try to get as much air out as possible it will stay longer better.
