G'Day

I'm a new member from Australia. I have been playing around with various smokers for quite a few years. Started off with small hot smokers before firing up a Hark gasser (I have two, one for home and another to chuck in the truck when camping). I have just bought myself an inexpensive offset smoker (Char-Griller Smokin Pro). These are almost unknown in Australia where BBQ means seared steaks on the grill. Hopefully I can pick up enough from you guys to help me through the early learning process
