These look amazing.  What rub did you use?  Is it your recipe or store bought?  They are making me so hungry.  Nice job.

We need a picture of you helper chowing down on one.  LOL

WaterinHoleBrew,  The Texas ribs in your pics look like they were cut fresh off the standing rib.  Most likely cut off to cut some boneless rib eye steaks.  Beef back ribs are found most often in cryo vac packs whole or split.  I know Walmart here carry's them in whole racks.  However you really have to weed out some that at least are somewhat meaty.  The split one's I have seen have more meat on them.  They do come from a different producer [Excel] than the whole racks at Walmart.  The split ones I have seen here are at a Cubs foods store.  During the Christmas time frame standing ribs are often on ad.  After the ad, some stores are long on the standing ribs and often cut off the back ribs so boneless rib eye steaks can be sold to move the excess ribs.  Then the back ribs are often marked down.  That is the time I search for them and buy them up.  Hope that helps.  Reinhard

What Reinhard says makes sense, because you probably know I always stock up on my Prime Ribs (Choice) during Christmas week because of the big sales. It would stand to reason that they would have a lot of standing rib left over, and one good way to get rid of them would be to remove the bones & slice the meat into Boneless Ribeyes. I never looked at that time, because I'm always tapped out, having just spent between $200 and $350 on Choice Prime Ribs.

The only problem is that Christmas is a long ways off and I want them NOW!!!!   LOL

The short ribs looked good at the store the other day but $6 - $7 a pound is extreme.  Maybe I'll do a rack of pork ribs and 1 pack of beef to experiement.  I think most will agree it's a sin to have empty grates when you have your smoker running, no?

I love me some beef ribs.

I agree Tom, I could have these quite often !

so...in 2 or 3 rib cuts, how long were they over the smoke?? any foil involved? (and i know, some think the foiling part is not only unnecessary, but taboo)

they look great, and i think my next rib adventure will be beef...i feel like i got the spare ribs down
