this was my weekend meat fest. fired up the uds friday with charcoal and a hunk of local hard wood from my wood pile. rubbed this 9lb picnic up with my homade sweet spicy rub. after 4-5 hrs i popped in the therm to check. 140. about 9pm the temps was good so i foiled it and popped in the oven to sit for a while. if anybody has a recipe that tops pork that falls clean from the bone send it to me because it will be the key to untold fortunes. had sammies with cheese and BBQ and chopped pickeled jalapenos. cheesy corn and carrots and mashed taters. well it lasted all weekend through yesterday. you may wonder why i posted a shot of an omelette. its stuffed with cheese and pork lol. topped with grilled green onion and mushrooms and salsa. yummy.
