Pulled Pork tacos w/ Mango Salsa

    Here is one of my favorite ways to use leftover pulled pork. I still have a few bags in the freezer. With it being Taco Tuesday, I decided on pulled pork tacos with mango salsa.

    Heating up the pulled pork:

    While the PP was heating, I made the mango salsa. I've made this quite a bit, here's the recipe. It's from the Internet.

    3 ripe mangos cubed
    1 red bell pepper diced
    1/2 red onion diced ( 1/2 cup)
    1 jalapeño seeded and minced (I used half to please the wife.)
    1 large lime juiced (1/4 cup)
    1/4 cup packed fresh chopped cilantro
    Salt to taste. I use 1/4 tsp. Smoked salt.

    Combine. Let sit 10 minutes to meld the flavors.

    Once the PP is heated, combine with your favorite BBQ sauce and heat thru in a sauce pan. I usually use Heinz tangy Carolina BBQ sauce. I find the vinegar based sauces work the best because it lightens up and cuts through the heaviness of the pork and tortillas.

    After the pork and tortillas are heated, make your tacos. I garish mine with the extra cilantro left over from the mango salsa.

    Thank you everybody! Thanks for the points. The tacos were very good, they're on a rotation around here. Also, the salsa goes very well with grilled and blackened fish dishes. Tasty stuff when the weather gets warmer.

    Thank you! Don't be afraid to use a whole jalapeño either. I'd prefer it over using a half of one.

    I'm surprised you don't like mangos being in a tropical climate, I guess I shouldn't assume...and here I've been dreaming about camping out in your backyard, lol!

    Ha Ha!

    I lived in Ft. Lauderdale for 35 years & there was a HUGE mango tree in my next door neighbors yard.

    I could have had all the mango's I could eat, just never liked them.

    Now I could eat avocados all day long.

    I had one of those in my yard!
