Well I finished my Boston Butt smoke and they came out fine.  There was no problem with them tasting bland this time.  It may have been the rub or it may have been the wood chips because this time I had a lot of TBS.

However, I had somehing happen this time that has never happened before.  Maybe someone else has.  I fixed 20 Boston Butts in 2 GOSM gassers with Hickory chips.  Set the temp on 240* and had no problem holding the temp.  I never do with the gassers.  I put them on last night at 10.30pm and got up every 2 hrs to check the temps and spritz them with apple juice & dark Jamacian rum.  Here is a list of the internals.

Midnight - 70*; 2am - 120*, 4:00am - 140*, 6am - 150* and 8am - 165*.  I foil wrapped all 20 and put them back in at 240*  By about 11:30am they had all reached 205*  That is, all but 6 of them.  4 in one smoker and 2 in the other.  They stalled at 185* and wouldn't go any higher.  I have read about this happening so I wrapped the 14 and put them in an ice chest.  I figured they would finish out soon.

At 1pm still 185, at 3pm, still 185.  Finally at 5pm they got up to 195* but were still there at 7pm (about 10 minutes ago) so I pulled them out and put them in the oven at 300* and will see what happens,  Has anyone every had any butts stall and be 6 hrs behind the others?  I've never had them so far apart.  The 14 others pulled easy and taste great.  What have I got, 6 rebels.  Any suggestions wwill be appreciated.  Thanks.

Sometimes when you are done smoking you just don't want any. The next day they all of a sudden it taste better.
After I put the meat in the cooler to rest I like to take a shower. This gets the senses all cleared out so I can enjoy the product

Ya sometimes they just stall on ya - the fork thing does work and if you have not moved the thermometer you should try that too
