WilliamZ must have been reading my mind yesterday with his awsome looking pepperoni & cheese stuffed breasts. At work I was thinking of ideas on what to stuff chicken breasts with. I saw his post & that was really close to what I was thinking. Anyway, pounded out breasts, stuffed with smoked pulled pork, cheese & a little sweet baby Ray's, wrapped in bacon, seasoned with rub & smoked. Pretty tasty!

Capitol idea! Look great! Hmm I'm thinking on bringing some PP to the local Chinese place..have them do me some eggrolls..seen that here once, but I lack the culinary skills to make it happen sigh...

I think the idea I was trying to think of was crumbled FATTY with cheese & mushrooms stuffed in a pounded chicken breast & bacon wrapped. Next time!

Did it take long to cook them? Also did ya smoke them at a higher temp? Man they look good, wished I was home smoking now... :<

Smoked at 275* till 170* Internal. One finished about 20 minutes before the other three?......Took about 2 - 2.5 hours total.
