Having family and friends over tonight to celebrate my sons kindergarten graduation. Decided to do pulled pork and hotdogs along with some abts (alien carrots according to the kids). I tried to get as much done yesterday as I could. Got the butts rubbed around 3pm. The 2 shoulders were 8 and 8.5 lbs so my original plan was to start at 2 am to give me lots of time to be done and wrapped in cooler for a while for dinner at 6. But after sitting for a couple days in fridge when I finally pulled out to rub I discovered they were split in half. Is this common? I couldn't tell until I defrosted them and wasn't happy. So now I have 4 4pounders! Lol. So started at 6 this mourning. Been close to 225 for 6 hours now and far left is 163 and right 158. Think I have time to let it ride but if it looks like I'm cutting it close I will foil. Nothing to do now but add a chunk of maple and chunk of apple every hour. Made up jjs finishing sauce last night,abts are all prepared. Got baked beans with chopped up pork from the flank of some spares I did Wednesday in the slow cooker. Wife made her awesome potatoe salad. So far everything's going great.
Simple rub I modified to our taste. I don't do the mustard base but I do prefer to grind real find and work into the meat aggressively.
Sharp cheddar, mozzarella, and cream cheese churned up in food processor and stuffed with jerky gun. Not pictured is each pepper got a Lil smokey. I also blanched peppers for 1 minute.
Holes plugged with litely fried maple bacon.
 
Forgot to mention, been sprit zing for the last 3 hrs once an hour with apple juice and a Tbls of rub mixed in and topping off the water pan. When we went to the ceremony at 9 this morning I double stacked the wood in the pan and when we got back a little over 2 hours later temp was perfect and smoke was just dying off. Guess everyone gets lucky every once in a while.
 
203 and 198. Perfect timing. Once I pull the one here in a minute ill put the abt's in, should have bout an hr and a half before smoking so thinking 275?
