A friend of mine's daughter had her first communion yesterday.  He and his wife asked if I would do the cooking.  How could I say no to that.  My biggest challenge was that my smoker isn't really big enough to handle cooking for a crowd.  That and with the 3:00pm start time I wanted to make sure there were no delays on my end.  So I cooked a brisket and a bone-in butt on Saturday, and did the beans and sausages on Sunday.  Everything timed out exactly perfect.  I arrived at their house with the food a half an hour before the start of the party.

On with the show...

Stared out with a 10.5 pound bone-in butt

I injected with a 50/50 mix of apple juice and beer

After a slathering of mustard and JB Fatboys All Purpose rub

Let that rest overnight then onto the WSM at 9:30.

Had a brisket working above it

7 hours later it hit 165* so it got foiled with more beer and apple juice

7 more hours we finally hit 195*.  I put it into a cassarole dish and let it set in a warmed oven for an hour and a half

Damn that had a nice bark on it!

The little internal thermomter (the bone) said it was done.  Just slid right out

I put it to bed for the night.  Then in the morning I used the finishing sauce and put into a crock pot.  Put on high for 2 hours then on low for 2 hours before heading out to the party.

I also did a double batch of Dutch's Baked Beans.  So good.  If you haven't mad these before, you really should they're awesome.  I modified them by leaving out the heat since there was a wide variety of people there.  Including a bunch of kids.

I also made a brisket and some sausages.  I'll post the brisket in the beef area.  After a couple of hours on the smoker I moved one pan of beans to the oven and put the sausages over the other pan of beans.

I ended up with 2 pans of brisket, 2 pans of beans, 1 pan of sausages and a big crock pot filled with pulled pork.  I tried to sneak a couple of quick pics at the start of party.

I even had a couple of people ask me about catering for future parties!

Everything looks awesome there Jay. I have also had some folks ask me to cater some parties and now I own the Catering Company.

Thanks everyone.  It really was a fun smoke.  It got a little stressful at times, but it was worth it.  Every said they loved it.
