So I friend of mine just gave me a old turkey cooker base. My ECB sits really pretty on it.sooo I was thinking of trying it out and instead of using the shallow charcoal pan
I would convert to gas!!! But how do I introduce the smoke..
I was considering placing the waterpan above the flame and throwing some chunks in it.. Or place my amzin pellet smoker on the inside rack.
What do you think?
 
I used to have that exact setup. Here is how I did it. First I had to cut the legs short on the propane stove so it would sit just up in there a little bit. Then I moved the legs that are on the smoker to the outside of the smoker which allowed the clearance I needed. Then I put some machine screws in to raise the water pan up so there was enough clearance in there for a coffee can. Next you will need to burn out a coffee can to get rid of the paint and stuff on it. take the coffee can and set it on the propane burner at a 45 degree angle or so just one corner of it is in the flame. The wood chunks go in the can. Chunks work better than chips and last a lot longer. You want to cover the opening of the coffee can with foil and then poke several holes in it for a little air to get in. It will take a little experimentation for you to get the can sitting just right. The nice thing is you can lift the whole smoker right up off the stove to change wood out or load, unload etc.... This setup worked for me for years before I got better stuff. The other nice thing is you can have another coffee can pre loaded with wood so you can just change it out. Make sure you get a good thermometer so you know how hot your chamber is. I hope this helps, it worked for me. One more cool thing about this method is when it is all said and done you have perfect homemade charcoal ready for whatever grill you might have that uses coal.

I use a similar setup occasionally.  One option is something like this: 


I put wood chunks (chips burn too fast) in a gardening sieve, which is placed on top of an upside-down chimney starter with the handles removed.  I try to keep it as simple as possible, with the gas flame providing the heat necessary to make the wood smoke.

Can you post a pic of the turkey cooker base?  I'm guessing it's pretty tall, compared to the relative height of the ECB charcoal pan?
