I was sitting on the couch this morning drinking my coffee and getting ready for the days list of honey-do items when the wife asked me what I wanted for my birthday dinner tomorrow. I told her I'd love to smoke something but I didn't know what I wanted. She asked my youngest, Jake, if he had any ideas and he suggested a pok loin. Smart kid for being all of 13!

As I embarked on my chores she and Jake headed to the freezer and came back a wee later with a nice little bone in loin roast. I thought this will be great over apple but before I could say a word Jake chimed in and told me he was going to do all the work for me to include capturing the pics as his present to me! What a lad!

Going to be a great birthday dinner to be sure! I really love letting the wee lad take the reins!
 
Finally I got to get to the computer and get the pictures uploaded of my birthday dinner from Sunday evening! After the first hour in the smoker at 260 degrees to create a good color Jake did come to me and asked if we had any apple juice. I told him I was pretty sure we didn’t but we did have some cranberry-apple juice that ought to work quite well (what a great call that was!). He also couldn’t find the sprayer so I told him to just mop the meat hourly and that should suffice.

He had the roast at 260 for a couple of hours and then backed it off to 230 until it reached 165 degrees internal. At that time he pulled it and wrapped it up in a double layer of foil. It was at this time I expected them to wake me up (I work midnights and was sleeping for the shift to come). I got up at 11 pm and headed downstairs and there it sat, in a cooler all wrapped up like a wee baby. That boy is going to be a professional smoker real soon!

We then decided it was too late to eat and I said we could wait until tomorrow and just reheat it in a low oven. I got home this morning dead tired and, since no-one was up (Spring Break) I went straight to bed. When I got up this evening I looked at the cooler and saw two cords coming out of it where Jake installed a heating pad and the remote thermometer and the internal temp was 155 degrees! It had been there like that all night! My wife said she was concerned it would be too dry but Jake stood by his decision and promised us it would be fine. He was right!

Not sure where he got that idea from but I sure liked it myself! I have to tell you, that thing tasted probably better than I could have done it!

Thats pretty cool that your boy is taking an interest in smoking/cooking. Good for you guys. That is how my brother and I got interested both of my parents cooked and now we love to cook.
