When smoking slim jims or summer sausage where is the best place to insert the probe for the therm. top, bottom or middle or does it matter???? I will be having most of them hanging but some will be on racks    Thanks in advance. Steve. 
 
Insert furthest away from your heat source; if that reaches temp then the rest will.  You can check both ends and the middle to see what the gradient is; if too much difference then cut down your lengths.

thank you i thought that some one said put it from top down so the grease wouldnt come out bottom i know low &slow
