Hi Folks, It's been a while since I posted any pics. I haven't been smokin' much lately and had a chance to do so on Thanksgiving, I'm not a big turkey fan and I love my BEEF. Hope ya like the pics.. I smoked a prime rib for 3 hours and finished it off in the oven due to the rain and wind yesterday. It was GREAT and so tender. Seasoned with smoked sea salt, smoked white pepper and smoked dried garlic.

After 3 hours of being in the smoker.. I smoked with maple wood.

Joe, That looks like some serious beef. I have a 4 bone standing rib roast in the freezer. It started out as a 7 bone standing rib roast, but I sliced off about 6 inch thick steaks for my grandson's Birthday dinner. Looks like it will be Smoked standing rib roast for Christmas eve dinner next month.
 
Hi Dutch, Happy belated Thanksgiving... Prime rib is always serious beef. The one above is 3 ribs, It was just the myself, the wife and our son and we had leftovers to boot. <haven't checked the fridge out yet my son likes to wake up in the middle of the night and raid the fridge so it may be empty again. He's a walking stomach with skin.. laugh.. This christmas I may do a fresh ham, something a li'l differnt depends on the christmas shopping list :) I know the wife likes sparkely trinkets <as she calls them> anyway back to smoking, I may try smoking a turkey at some point, I have smoked chickens and they go well with the alamaba white sauce and I'm thinking that turkey may go well with it also .. Hope you had a great day with family and friends. Ahh the wife wants me to make more bacon .. like she has to twist my arm .. laugh ..

hi Ron, I smoked it at 250 for 3 hours. I made a rub with some spices I smoked this past summer. I used smoked sea salt, smoked white pepper and smoked dried garlic. I mixed equal parts of the 3 spices above. I finished it off in the kitchen oven at 375 deg until it hit 145 deg. and let it rest for a li'l while. Let me know if you have any other questions.

A Li'l chill in the air today to be smoking for me, I may smoke something this thursday going to be 65 deg and after that I think the cold weather will be setting in. When do you put your boat up for the winter?

Hi Joe!

My boat went into inside storage on October 20th this year and it will be back in its waterbed on or about May 12th next season.

Looking forward to it as it is my favorite thing to do in my life. :)

We have a freezing rain advisory for tonight; however the ground has not frozen yet, unbelievable for Maine at this time of the year!
