So finally got the WSM it's first smoke this weekend and since prime rib was on sale, thought it would be a good time to do as well. I smoked it with Cherry and Pecan. It took about 4 hours start to finish although I should have pulled it a little sooner but lost track of time a bit so slightly overdone. I wanted to pull it at 135 and ended up being about 142. But it was still very tasty. 

I am so happy with the WSM purchase. I could not believe how easy it was to control temp. Held between 225 and 230 the entire smoke with little to no effort.


Rubbed, wrapped and ready for a rest.

Fresh off the smoker.


Sliced and plated with Twice Smoked Potatoes and this evening's beverage. (Not pictured - horseradish sauce and au jus)

Looks good. After discovering how delicious smoked prime rib is I always check to see if they are on sale. It is one of my new favorite items to smoke.
