Prime Rib Question

    Hey All,

    I have a question, I purchased a nice three bone Prime Rib for New Years Eve Dinner and decided to dry age it in the fridge. I have done this for the last few years and have a Plastic container I put it in on a rack and change the paper towel under it every day.

    There are plenty of holes for air circulation and I have never had a problem.

    This year the PR has been sitting in this container for 3 or four days now and it looks a little brown and smell like it is spoiled.

    Has this gone bad? I would hate to toss it out as it was not cheap, but I also would not want to cook bad meat.

    Ideas or suggestions appreciated.

    If it smells bad it probably is, as hard as it is to toss it, that is what I'd do.

    Thanks Bear55 and DS the smell is the part that is bothering me as well. The outside of the meat not so much.

    DS i have a small plastic storage container that I use. Think big rubbermaid container with a lid that locks down, but small. I drilled many holes in ti for air circulation and fip it over, put a rack on the lid and the PR on the rack. This method has always worked.

    But this time I am thinking the meat might not make it.

    Could be a bad piece of meat. I'd take it back!

    How was it packed when you bought it? There is no way it should have gone bad that quickly if it had a decent sell by date. Unless your fridge is running warm. I buy discounted beef occasionally that can have some browning and slight odor and usually cook it right away. The PR we are cooking today has been in the fridge since last Wednesday, 7 days,  and it looks and smells great.

    Hey all thanks for the advice. You guys and  this place rocks.

    So, I took dirtsailor's advice  and called the store, they said no problem just bring it back. So I returned it (who knew you could return meat) and got a new bigger PR.
