Hey All,
I have a question, I purchased a nice three bone Prime Rib for New Years Eve Dinner and decided to dry age it in the fridge. I have done this for the last few years and have a Plastic container I put it in on a rack and change the paper towel under it every day.
There are plenty of holes for air circulation and I have never had a problem.
This year the PR has been sitting in this container for 3 or four days now and it looks a little brown and smell like it is spoiled.
Has this gone bad? I would hate to toss it out as it was not cheap, but I also would not want to cook bad meat.
Ideas or suggestions appreciated.
