I bought a 4 pound boneless ribeye roast on Christmas Eve.  I coated it with olive oil then rubbed it with garlic, montreal steak seasoning and some pepper.  Was planning to smoke on Christmas for supper and then our family got sick.  We now are having Christmas on Sunday.  Is that too long to leave my prime rib in the fridge with rub on it?  It will have had rub on it for 5 days.  I just did not want to ruin it and have it taste bad.  Any input would be greatly appreciated.  Thanks!
 
Nope! The salt in the rub helps preserve it and it will just absorb more of the flavors. Smoke it and post the Qview...JJ
