Prime Rib on the UDS

Scored a whole prime rib and decided to try it out on the UDS. Seasoned it with kosher salt and fresh cracked black pepper.



Smoked it at 225 with a little bit of oak until internal temp hit 120. Took around 4 hours, then let it rest for 30 minutes.



Served it up with a baked potato, my moms sauteed mushroom recipe, and topped with Jus.



It was delicious, perfectly cooked with just a hint of smoke on the outer edges. I am looking forward to creating something great with all of the leftovers.

WOW! That looks fabulous! Just this afternoon I had the neighbor who I always torture with smoke and smells pops his head over the fence and he asked me if he bought a seven rib standing prime, could "we" smoke it. Hells Yeah!

So I've been thanking about temps and time.

Now that looks fabulous and yummy too. I love the whole rib roast but we cut them into steaks for single steak dinners. You did a Great job with this one.
 
What a nice hunk of meat! My wife brought one home one day that I smoked for about three hours, sliced and then slapped on to a jet engine hot grill just long enough to mark! Yummy!

That looks great. For leftovers you can reheat in the micro gently with some aujus on the plate to absorb the waves a still have a rare med rare piece of meat. Another way is to have some hot aujus on the stove and dip your slices into that with the heat off.
