Prime beef brisket / Pork butt / RIbs = All nighter, cans of beer and Ancient Aliens.

  1. Oh it was good. I was in super fast mode to serve so I missed a bunch of pictures.  




    Nice pork butt on the lower rack.  Peach wood from Fruita was great.



    Sorry no picture of the sliced brisket however it was fantastic

    S&S , I know what you mean by no Brisket shots. My "Bohemian" bunch have it eaten before it gets to the table , I'm lucky I'm the cook , I sample as it comes off , or I wouldn't get any [​IMG]  .

    Looked good though , like lots of good Bark on it too [​IMG]

    Everything looks awesome. Great color/bark on that smoker shot. Were you spritzing them with anything or did they look like that on their own?

I did not spritz with anything.  There was a nice fat cap on the brisket so that worked out just fine.  I wrapped the brisket and the shoulder in foil and put in my cooler for about 5 hours.   Still hot when I pulled them out .   I will say this, It was fun to smoke both meats at the same time.  Both came out perfect. 
  10. Make no mistake,  there were aliens to be seen.  About 2:30am and 8 beers later aliens came to my humble abode to check what all the smoke was about and the delicious smell.  I sent them on their way since they showed up early to the party.  They said they will be back.

    Looks darn good.

    Is that the GOSM propane smoker? For whatever reason, I never had any luck with mine. It would never hold the temperature correctly. I now use a masterbuilt electric smoker and it smokes like a charm.

    The smoke turned out great. I would love a plate of that for sure.  I hear that out where you are there is a lot of alien activity.  They visit my house now and then too

It is an 18" propane Smoke Vault by Camp Chef.  I really should have bought the 24" but this will do for at least another year.  The variance in actual temperature from the built in thermometer is about 20 degrees. (as you can see in the picture,  I have an additional thermometer hanging below the pork shoulder).

    I think the problem with my GOSM is, air is coming in from the bottom; thus, the fluctuation in the temperature. But I love my Masterbuilt electric smoker, I use it all of the time and have never had a serious problem with it.

    Again, your food looks great.

    S&S , doing both Brisket and Butt together is not bad , I do a lot of mixed smokes and they do well , I also do a lot of full smoker -  smokes[​IMG]...


    This is as my usual mixed smoke...


    I was taking the Butt off , if I had , had the Brisky in the beginning , I'd have put it on at the same time , they both weighed 10# , so they would have come off close together , maybe [​IMG]  .

    Very nice work, that bark is impressive, and it looks like your all-nighter was rewarding!

    As a long-time X-Files fan, I do enjoy that show, please hold no hard feelings about the pic!
