I noticed you have a temp probe stuck thru a chunk of wood. Did you also have one in the meat?
I only have one probe so I have been using it in the meat and not to check the cooker temp. Maybe I am doing it wrong?
Or maybe I should quit being so cheap and buy more probes.....
I have 2 probes, one for the grate and one for the meat.
Heres my first fatty, eggs and hashbrowns. I am happy with the results.
Turkey looks good man. I may have to smoke some Thanksgiving food this year...never thought to do that.

The turkey suprised me. Flavor is good. Smoked it with hickory. Not what I expected but good.
looks great, really got that turkey dark and the fatty looks great as well, now you hooked!!!
