Just another line stolen from Old School. Jeez I quote that movie WAAY too much.

Anyhow, just threw on some spares and a chicken (for the wife). qview to follow as everything is foiled...

Here's the setup out back on the stoop:



Got the Brinkmann vertical and the old Meco trooper going strong. I never really believed in TBS until now with the Brinkmann. Here it is, and the next pic is of the Charcoal Wok that changes this smoker forEVER!!!
 
Temps holding steady....chicken in the barrel smoker is holding steady...gonna foil at 160...then let it cook until it's 175 and then leave it foiled for a good 40min before it falls apart...

haven't looked at the ribs, but added smoke a few times so far to maintain. Been on almost two hours.
 
Is it possible to wear TBS? I think I am

well, chicken is off...cooked a little quick....foiled for another 25min sitting in the microwave so it doesn't cool off...

Ribs before I foiled them. Damned thing about that charcoal wok is that if it is going, it's really going. I have ended up doing my spares for 2-2-1 rather than 3-2-1 because of the higher temps. Oh well, not as long to wait before I eat 'em up I guess.
