hey all did a little experiment today while i was smoking a brisket and beef jerky. i fired up the smoker and got my charcoal good and hot. stuck my log in and noticed i was getting very heavy white smoker for 30 mins into starting. so i took out the already burning wood and stuck it in a bucket of water and let it soak for 10 mins. stuck it back into the smoker and low and behold after 10 mins i was getting a nice lite blue smoke. i tried this a second time and it worked again. heres my question does anybody preburn their wood prior to doing a long smoke?
