Looks like I'll be getting my hands on a nice commercial refrigerator for free (not working of course)! I've done a small build that included stripping out the internal plastic and insulation. My question is, do I have to do the same if the interior of the fridge is metal? If there is foam inside, will the metal keep it from outgassing into the meat? I'd really prefer to skip this really challenging stage of the build!
 
Hello.  Well from your post I think you know the answer but are hoping for another option.  You already mentioned outgassing so you know what is gonna happen.  It is probably foam inside.  You will want that smoker to be versatile so you MIGHT want to go with higher temps for say turkey.  IF that foam melts it will all be in the bottom of your smoker and you will then have no insulation.  Wish I had better news.  I would take it out.  Keep Smokin!

Boooo! Well, you've got it pegged - I just wish there was a better option. I won't know for sure for a few days, but I'm guessing it's foam. No one uses the other stuff anymore eh?
