Question for you all...smoking a couple of butts (6 & 8 lbs) tonight, but not serving them for about 36 hours. My plan is to take them off the smoker tonight, wrap in aluminum foil, then a towel and place in a cooler for a few hours. My question is this...what's the best way to keep them fresh till I serve? Should I pull the meat off then bone and then refrigerate or is there a better way to keep them fresh?
 
Personally I go ahead and pull them placing the meat in a disposable aluminum pan then pull foil tight over the top. When I go to reheatI pull the foil back mix in some finishing sauce then into the smoker or oven
