Pork ?

In general terms, the butt is cut high up on the front shoulder.

The "Picnic" is cut further down the front arm.

Some different muscles.  Some different cooking tendencies.

Butt for pulled pork and sausage would be my choice.

Picnic still great meat.  Especially the cushion. When I was a kid, my parents had lived through the depression.  We ate a lot of "hams"  made from the "Picnic".  We don't see those much in stores these days.

Do a search?  I bet Pops has a couple of tutorials with pics that would be of great help.

The Butt is just more meat for the money. The Picnic has a big bone, more surface fat and skin that has to be removed before smoking. The only time, I feel, the Picnic is the better choice is if you find them at <$1.50 per pound...JJ

The Picnic  is a much leaner cut of pork that requires a lot more attention. I would recommend injection and mopping  or spritzing .
