Pork Spare Ribs

    Hey all,

    This is my first proper way to do ribs I guess you would say, as before I would put them off and couldnt figure out why they would always turn out kinda crappy. Was never happy with them. Guess that is why I do so much reading on here so I can improve and we can enjoy what we eat instead of just eating it LOL.

    Anyway here is what we smoked last night.

    trimmed and ready to go on the smoker

    6 hrs later off they come. Pic is a little dark.

    Any tips and tricks would be greatly appreciated. I tried part of one and it was excellant for what I like. I am going to change what I mop them with though. I would have liked to spritz them with just apple juice but forgot to pic up a new bottle as my old one had an accident and we had to bury it in the land fill.

    Looks like you nailed it to me! 

    For me ribs are the hardest thing to smoke and have them turn out great every time.

    I just did a rack yesterday that were the best I have ever done, but now I'm worried I won't be able to to it the same next time.

    I go through the same procedure each time & they are a little different each time.

    You just have to keep experimenting until you find the ribs that you & your family like. Then stick to that procedure.

    Take notes each time so you can duplicate your effort.

    Im going to have to get in the habit of writing down everything I do. Notes on this one sure would have helped on the next. They have two very distinctive flavor profiles. Very sweet to begin with then the heat just sneaks up on ya and grabs ya from behind. My brother went nuts over the mop sauce, he loved it. BUT I dont l care for the finished apperance of it. I wish it would have hardened a bit more instead of being "soft" so to speak.

    Will be working on it to find that happy medium

    My first attempted turned out great and hoping to replicate it this weekend.

I have done several racks now Johnny Trigg/321 style...kind of my own twist on both.  Trimmed and rubbed, in the smoker @ 225 for ~3 hours, until you get good pullback on the bones.  Then foil with squeeze Parkay, honey and brown sugar.  Back in the smoker for around 2 hours.  Out of the foil, be careful they want to fall completely apart at this point.  Then back into the smoker for another hour or so to firm them up.  I haven't had a bad rack yet and my in-laws love them, my wife...well, she's a vegetarian, I just don't get it!

    I get my share of veggies second hand.

    Just about everything I eat was once a vegetarian.

    Bones thx for reminding me of Johnny's method I couldnt for the life of me remember, but then again like I've said before my memory is as long as my big toe..or was it my little one..
